Winter Fruit Compote
MAKES 10-12 SERVINGS
1 cup dried apricots
2 cups frozen sliced peaches
2 cup frozen sweet cherries (pitted)
2 cups pineapple chunks
1 (10-ounce) package frozen raspberries
1 cup applesauce
¼ cup honey
2 tablespoons frozen orange juice concentrate
1 tablespoon grated lemon or orange zest
In a 9x13-inch baking dish, arrange fruit in layers in order given. Mix applesauce, honey, orange juice concentrate and zest and pour over top. Heat in 350 degree oven for 20 minutes.
Serve warm over pound cake or ice cream, or on top of cooked oatmeal.
Holds well in covered container in refrigerator for up to 2 weeks.
Note: Use unsweetened fruit. If unavailable, use sweetened fruit and omit honey.
